For this meal, we sourced from the Clemson Area Food Exchange, a year-round, online farmers market that serves Anderson, Clemson, Easley, Liberty, Long Creek, Powdersville, Pickens, Salem, Seneca and Walhalla. Ingredients
For Pasta & Produce
• 1 package of 313 spinach & garlic ravioli
• 6 - 10 Little Upstate Farm kale leaves
• 1 handful Dark Spore mushrooms from Random Mix bag
• 1 clove garlic
• 2 tbsp olive oil
• 2 tbsp butter
• Salt & pepper to taste
Cook pasta as packaging instructs in separate pot.
Slice mushrooms to 1/2" or cook whole depending on size.
Add butter and oil to a pan and heat over medium high heat. Add mushrooms to the pan and toss with olive oil mixture.
Allow them to cook 3-4 minutes without disturbing to brown on one side.
Add garlic, salt and pepper. Toss in kale. Continue cooking an additional 3-4 minutes stirring occasionally until cooked.
For Sauce
• 1/3 c Forx Farm Parmesan
• 4 tbsp butter
• 2 c Southern Oaks Jersey Farm raw milk
• 4 cloves garlic
• 2 tbsp all purpose flour
• Rosemary to taste
In a large skillet, melt butter over medium heat, then add garlic and cook for 30 seconds or until fragrant. Stir constantly so the garlic doesn't burn.
Whisk in milk gradually and season with salt and pepper. Add in flour, stirring, and cook for about 1 minute. Stir frequently.
Simmer until it thickens, about 1-2 minutes (continue to stir!) Whisk out any lumps that form. Cook the sauce just until it thickens. Test the sauce with a spoon; if it coats the spoon, you're ready for the next step.
Stir in Parmesan and rosemary, then remove pan from heat. Sauce will continue to thicken once removed from the heat.
Plating
Dish pasta and top with kale and mushrooms. Add sauce, and enjoy with your favorite beverage!
